Earthy mushrooms, creamy paneer, and richly spiced TASTY BITE®/MD Madras Lentils come together in this deeply savoury skillet meal finished with cooling yogurt and fresh cilantro. It’s cozy, bold, and weeknight-fast with restaurant-style flavour.
INGREDIENTS
- 1 pouch TASTY BITE®/MD Madras Lentils
- 8 oz (225 g) paneer, cubed
- 2 tbsp (30 mL) vegetable oil
- 12 oz (345 g) cremini mushrooms (or mix of cremini, shiitake, and oyster)
- 1 small yellow onion, thinly sliced
- 3 cloves garlic, minced
- 1 tbsp (15 g) fresh ginger, minced
- 1 tsp (5 g) cumin seeds
- 1 tsp (5 g) coriander
- 1/2 tsp (2.5 g) turmeric
- 1/2 tsp (2.5 g) paprika
- 1/2 tsp (2.5 g) kosher salt
- 1/4 tsp (1 g) black pepper
- 1/4 cup (60 mL) water or vegetable stock
- 1/4 cup (60 mL) plain yogurt, plus more for finishing
- 1/4 cup (15 g) fresh cilantro leaves
- Warm naan or basmati rice, for serving
COOKING STEPS

1 Sear the Paneer: Heat 1 tbsp (15 mL) oil in a large skillet over medium-high heat. Add paneer and cook until golden on multiple sides, about 4 to 5 minutes. Transfer to a plate.

2 Sauté the Mushrooms: Add remaining 1 tbsp (15 mL) oil to the skillet. Add cremini, shiitake, and oyster mushrooms. Cook undisturbed for 2 to 3 minutes to develop color, then stir and continue cooking until deeply browned and tender.

3 Aromatics & Spices: Add onion and cook until softened, about 4 minutes. Stir in garlic, ginger, cumin seeds, coriander, turmeric, and paprika. Cook for 1 minute until fragrant.

4 Simmer the Lentils: Stir in TASTY BITE®/MD Madras Lentils and water or stock. Bring to a gentle simmer.

5 Combine & Warm Through: Reduce heat to low and stir in yogurt until incorporated. Return paneer to the skillet and simmer for 2 to 3 minutes until warmed through. Season with salt and pepper.

6 Garnish & Serve: Spoon into shallow bowls and finish with additional yogurt, fresh cilantro, and warm naan or rice.
