INGREDIENTS
- 2 pouches Tasty Bite Vegetable Tikka Masala
- 1 large head cauliflower
- 1 ½ cups (90 g) panko breadcrumbs
- 1 ½ cups (240 g) cornmeal
- 1 tsp (5 g) paprika
- 1 tsp (5 g) onion powder
- 1 tsp (5 g) kosher salt
- 1 cup (125 g) all-purpose flour
- 4 large eggs, beaten
- ¼ cup (60 ml) vegetable oil (for pan-frying)
- ¼ cup (60 ml) plain yogurt (for drizzling)
- 2 tbsp (8 g) fresh coriander, chopped
- 2 tbsp (8 g) fresh mint, chopped
- ¼ cup (45 g) pomegranate seeds
COOKING STEPS
-
1 Prep the Cauliflower Steaks: Trim the outer leaves of the cauliflower head while keeping the stem intact. Slice the cauliflower vertically into 1-inch (2.5 cm) thick steaks, keeping the core intact so each steak holds together. Set aside.
-
2 Set Up the Breading Station: Set up three shallow bowls or rimmed plates in an assembly line: First plate: Flour. Second plate: Beaten eggs. Third plate: Whisk together the panko breadcrumbs, cornmeal, paprika, onion powder, and kosher salt.
-
3 Dredge & Coat: Dip each cauliflower steak first into the flour, shaking off any excess. Next, dredge thoroughly in the beaten egg, and finally press firmly into the panko-cornmeal mixture until evenly and generously coated. Transfer coated steaks to a large plate or baking sheet.
-
4 Pan-Fry to Golden Crisp: Heat ¼ cup (60 ml) vegetable oil in a large skillet over medium heat. Working in batches if necessary, add the cauliflower steaks and fry for approximately 3 minutes per side, or until golden brown and tender-crisp. Transfer to a cutting board lined with paper towels to drain excess oil.
-
5 Warm the Sauce & Assemble: Warm the Tasty Bite Vegetable Tikka Masala in a saucepan over medium-low heat (or microwave for 60 seconds) until heated through. Spoon a generous layer of warm tikka masala sauce onto each serving plate, then arrange a golden cauliflower steak directly on top.
-
6 Garnish & Serve: Drizzle each plate with plain yogurt, sprinkle generously with the fresh chopped mint and coriander, and finish with a scattering of vibrant pomegranate seeds. Serve immediately with warm basmati rice.
