A savoury, comforting dish featuring juicy ground beef simmered in a rich, mildly spiced coconut curry sauce using TASTY BITE®/MD Coconut Curry.
INGREDIENTS
- 2 pouches TASTY BITE®/MD Coconut Curry
- 1 lb (454 g) ground beef
- ⅓ cup (30 g) plain breadcrumbs
- 1 large egg
- 2 garlic cloves, minced, divided
- 1 tbsp (15 g) grated fresh ginger, divided
- ¾ tsp (4 g) kosher salt, divided
- ¼ tsp (1 g) freshly ground black pepper
- 2 tbsp (30 ml) neutral oil
- 1 small yellow onion, finely diced
- ½ cup (120 ml) water
- 2 cups (60 g) baby spinach
- 1 tbsp (15 ml) fresh lime juice
- 2 tbsp (8 g) chopped fresh cilantro, for garnish
- Cooked basmati rice, for serving
COOKING STEPS
-
1 Mix the Meatballs: In a bowl, combine the beef, breadcrumbs, egg, half the garlic, half the ginger, ½ tsp (3 g) salt, and pepper. Mix gently and form into 16 meatballs.
-
2 Brown the Meatballs: Heat the oil in a large skillet over medium heat. Brown the meatballs on all sides, about 6–8 minutes total. Transfer to a plate; they will finish cooking in the sauce.
-
3 Build the Curry: Add the onion to the skillet and cook for 3–4 minutes until softened. Add the remaining garlic and ginger and cook for 30 seconds. Stir in the TASTY BITE®/MD Coconut Curry, water, and remaining ¼ tsp (1 g) salt.
-
4 Simmer and Serve: Return the meatballs and any juices to the skillet. Cover and simmer gently for 10–12 minutes, until the meatballs reach 160°F (71°C) in the center. Stir in the spinach until wilted, then add the lime juice. Garnish with cilantro and serve over warm basmati rice.
