Madras Lentils Soup

INGREDIENTS
- 1 tbsp (15 mL) olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- (15 ounces) (443 mL) diced tomatoes
- One pouch (285 g) TASTY BITE® Madras Lentils
- 3 cups (750 mL) low-sodium vegetable broth
- 2 cups (500 mL) fresh spinach
- Salt and black pepper, to taste
- 1/2 lime, juiced for freshness
- Fresh cilantro, chopped, for garnish
STEPS

1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 3-4 minutes until the onion is translucent and begins to soften.

2. Add the diced tomatoes, lentils and broth, stir, cover and simmer for 10 minutes.

3. Stir in the spinach and simmer for another 5 minutes until it is wilted.

4. Taste and adjust seasoning with salt, black pepper, and a squeeze of lime juice for brightness.

5. Ladle the soup into bowls and garnish with fresh cilantro. Serve with warm naan bread and enjoy.
