Tender pieces of fresh cod simmer gently with potatoes and vegetables in a rich TASTY BITE®/MD Coconut Curry broth. Finish with spinach, lime, and cilantro for a comforting one pot meal.
INGREDIENTS
- 2 pouches TASTY BITE®/MD Coconut Curry
- 1½ lb (680 g) fresh cod fillets, cut into large pieces
- 1 lb (454 g) baby potatoes, cut into ½-inch (1.25 cm) pieces
- 1 tbsp (15 ml) olive oil
- 1 medium yellow onion, diced
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 1 tbsp (15 ml) grated fresh ginger
- 1 cup (240 ml) low-sodium vegetable broth
- ½ cup (120 ml) unsweetened coconut milk
- 2 cups (60 g) baby spinach
- ½ tsp (2.5 g) kosher salt
- ¼ tsp (1 g) freshly ground black pepper
- 1 tbsp (15 ml) fresh lime juice
- ¼ cup (15 g) chopped fresh cilantro, for garnish
COOKING STEPS
-
1 Cook the Aromatics: Heat the olive oil in a large, deep pot over medium heat. Add the onion and bell pepper and cook for 4–5 minutes, until softened. Stir in the garlic and ginger and cook for 1 minute.
-
2 Simmer the Potatoes: Add the potatoes, TASTY BITE®/MD Coconut Curry, vegetable broth, coconut milk, salt, and pepper. Bring to a gentle simmer. Cover and cook for 12–15 minutes, until the potatoes are nearly tender.
-
3 Cook the Cod: Nestle the cod pieces into the stew in a single layer. Cover and simmer gently for 6–8 minutes, until the fish is opaque and flakes easily and the potatoes are tender. Avoid stirring vigorously so the cod stays in pieces.
-
4 Finish and Serve: Stir in the spinach just until wilted. Add the lime juice, taste, and adjust seasoning if needed. Ladle into bowls and garnish with cilantro.
