An aromatic and comforting South Indian-inspired curry featuring fresh, lightly browned okra simmered with warm spices, creamy coconut milk, and TASTY BITE®/MD Coconut Curry.
INGREDIENTS
- 2 pouches TASTY BITE®/MD Coconut Curry
- 12 oz (340 g) fresh okra, trimmed and sliced into 1-inch (2.5 cm) pieces
- 2 tbsp (30 ml) coconut oil
- 1 tsp (5 g) black mustard seeds
- 10 fresh curry leaves
- 1 small yellow onion, thinly sliced
- 2 garlic cloves, minced
- 1 tsp (5 g) grated fresh ginger
- ½ tsp (2.5 g) ground turmeric
- ½ tsp (2.5 g) kosher salt
- ¼ tsp (1 g) freshly ground black pepper
- ½ cup (120 ml) unsweetened coconut milk
- 1 tbsp (15 ml) fresh lime juice
- ¼ cup (15 g) chopped fresh cilantro, for garnish
- Cooked basmati rice, for serving
COOKING STEPS
-
1 Prepare the Okra: Pat the sliced okra completely dry with a clean kitchen towel. This helps it brown properly and keeps the curry from becoming slimy.
-
2 Toast the Spices: Heat the coconut oil in a large skillet over medium heat. Add the mustard seeds and cook until they begin to pop, about 30 seconds. Add the curry leaves and stir for 15 seconds.
-
3 Cook the Okra: Add the okra in an even layer and cook, stirring occasionally, for 8–10 minutes, until lightly browned and tender. Add the onion and cook for 3 minutes, then stir in the garlic, ginger, turmeric, salt, and pepper. Cook for 1 minute more.
-
4 Simmer the Curry and Serve: Stir in TASTY BITE®/MD Coconut Curry and coconut milk. Simmer gently for 4–5 minutes, until heated through. Stir in the lime juice, garnish with cilantro, and serve over warm basmati rice.
