Start your day with a delicious twist on breakfast. Quick to make and bursting with flavour, these burritos are a wholesome choice for busy mornings or leisurely brunches.
INGREDIENTS
- 1 cup TASTY BITE® Madras Lentils
- 1 cup of (250 mL) Basmati Rice
- 1 onion, chopped
- 6 large eggs
- 8 flour tortillas
- 1 cup (250 mL) shredded cheddar cheese
- 1 sliced avocado
- 2 tbsp (30 mL) butter (for eggs)
- Salt & pepper to taste
STEPS

1 Using a medium pan, sautee the chopped onion with half the butter until golden and translucent.

2 While the onion is cooking, heat the lentils and the rice according to bag instructions.

3 Once onions are cooked, remove from the pan and place in a bowl. Set aside.

4 Using the same pan, add the rest of the butter and scramble eggs. Season with salt and pepper.

5 Assemble burritos using the rice, lentils, onion, eggs, cheese, and avocado.
