Start your day with a delicious twist on breakfast. Quick to make and bursting with flavour, these burritos are a wholesome choice for busy mornings or leisurely brunches.

INGREDIENTS

  • 1 cup TASTY BITE® Madras Lentils
  • 1 cup of (250 mL) Basmati Rice
  • 1 onion, chopped
  • 6 large eggs
  • 8 flour tortillas
  • 1 cup (250 mL) shredded cheddar cheese
  • 1 sliced avocado
  • 2 tbsp (30 mL) butter (for eggs)
  • Salt & pepper to taste

STEPS

    Using a medium pan, sautee the chopped onion with half the butter until golden and translucent.

    While the onion is cooking, heat the lentils and the rice according to bag instructions.

    Once onions are cooked, remove from the pan and place in a bowl. Set aside.

    Using the same pan, add the rest of the butter and scramble eggs. Season with salt and pepper.

    Assemble burritos using the rice, lentils, onion, eggs, cheese, and avocado.
